Percentages in chocolate can be misleading, because they are combination of both cocoa beans and cocoa butter. For example, an 80% bar could be 40% cocoa beans and 40% cocoa butter, or a 80% bar could be 80% cocoa beans. The difference in intensities will be huge, yet the percentage is still the same. Our 80% bar is 70% cocoa beans and 10% cocoa butter, as we need the extra cocoa butter for it to be fluid enough for us to work with it. It's very intense. In fact one well respected industry professional described this bar as WOW WOW WOW!
