All Purpose Protein Flour

This low carbohydrate / high protein flour is truly a diabetic's dream come true! The macros are insane! What's even better is that this flour substitutes 1:1 with enriched white flour. We made the sandwich bread and pizza in the photos. We've even made pancakes, banana bread, cupcakes, brownies, and pasta with this flour and it all works great! Imagine eating spaghetti and meatballs, knowing that the pasta is almost all protein, the meatballs are protein, and your blood sugar won't spike after dinner! How about a decadent grilled cheese sandwich where each slice of bread has 24 grams of protein and next to no carbs (only 3g per slice)! BOOM! THIS FLOUR WILL NOT SPIKE YOUR BLOOD SUGAR!

THIS ISN'T JUST "ANOTHER FLOUR". THIS SOLVES A LEGITIMATE PROBLEM FOR DIABETICS.

One And Done! If you are making bread there is no need to let it rise twice. Simply mix and portion your dough into the pan, let it rise and bake!
Low and Slow! The proteins in this flour will brown very quickly under high heat. Drop your cooking temperature by approximately 25 degrees and add time to your cooking, to make sure it's fully cooked in the middle.
A Pound Of Feathers! This flour is much lighter by volume than enriched white flour. One cup of 2-Pure flour weights approximately 114 grams whereas enriched white flour weighs about 176 grams. This is important if you are cooking by weight.
Baking Soda/Powder For most baking such as pancakes, banana/pumpkin loaf, etc. you can substitute 2-Pure flour 1:1 with white flour as the 2-Pure flour absorbs a lot of moisture, in spite of it being less dense than conventional flour.
Yeast Tips For bread dough you may need add another 1/3 c 2-Pure flour for every cup of flour substituted out of your recipe.
A Bit Gooey Bread dough should be a cross between batter and firm dough. It should be stretchy but sticky to touch. The proteins will absorb a lot of moisture as it bakes and the bread will firm up.
Stretch Your Dollar This flour is VERY high in protein - like 6 times higher than most flour. There's nothing wrong with stretching your dollar a bit. You can make a fluffier (but still very high protein content) bread by cutting the 2-Pure protein with conventional flour to your liking.

When we created this flour, our ultimate goal was to create something that was SIMPLE to use - something that was high in protein and very low in carbs - which could easily be used in a keto or diabetic diet and substituted for regular wheat flour in virtually any recipe.

Obviously first on our list was a bread dough, and we think we nailed it! The recipe we share below makes a great sandwich bread that rises nicely, tastes like bread and not the expensive drywall-dust flavoured weapons of mass destruction most gluten free breads taste like.

From there we experimented some more, and over time learned that for the most part this flour DOES substitute 1:1 with most flours in most recipes, including pasta, brownies and cupcakes! Here are some recipes to get you started!
