BIG BAG O' PANCAKES

Our CEO is a pancake snob. While growing up, fluffy, home-made pancakes doused with butter and maple syrup were a family tradition he looked forward to at the start of every weekend. Weird mixes and frozen pancakes always mysteriously "fell" into the garbage, forcing his Mom to make the pancakes from scratch. He was so particular that he wouldn't even eat reheated home made ones. They were always best hot and fresh.

The pancakes in this bag are just like those. Don't tell anyone they are a "protein pancake'. They won't even know. They're that good.

Low and Slow! The proteins in this flour will brown very quickly under high heat. Drop your griddle temperature to about 325 degrees, or medium heat and add time to your cooking, to make sure it's fully cooked in the middle.
Bubble Bubble Normal pancakes will display bubbles in the middle when they are ready to be turned. These won't do so quite as much as the batter is very thick. You will have to watch them closer.
Thicker The Better! This pancake batter is should be very thick when poured onto the griddle. It will still fluff up a bit.
It Will Absorb Moisture! The proteins in this batter will absorb a LOT of moisture and may need a touch more milk added as you use it.
Wicked Waffles! This batter makes great waffles, as the proteins really like to brown and crisp up when in contact with a hot surface.
